Lime Oleo

Peel the skins of 10 limes, and to container with 350g caster sugar and muddle together. Seal and leave for 12 hours. add 150ml of water and 4g citric acid and stir until dissolved then bottle.

 

Pineapple Oleo

Cut one small pineapple into chunks then add to a container with 200g of caster sugar. And leave for 12 hours. Then add 200ml of water and stir until dissolved.

 

Citric Oleo

Peel the skins of 5 limes and 5 lemons and add to container with 350g caster sugar and muddle together. Seal and leave for 12 hours. add 150ml of water and 4g citric acid then stir until dissolved then bottle.

 

Demerara sugar syrup

100ml boiling water, 100ml demerara sugar, stir till dissolved
